Ingredients

  • 8 ounces boneless pork shoulder roast

  • 1 onion, cut up

  • 1/4 teaspoon ground black pepper

  • 2 cups chicken broth
  • 1 ripe large plantain or 2 firm medium bananas, peeled and sliced
  • 1 medium sweet potato, peeled and cut into 1/2-inch cubes
  • 1 cup thinly sliced, peeled cooking apple (1 medium)
  • 1 cup thinly sliced, peeled pear (1 medium)
  • 1 8 ounce can pineapple chunks (juice pack), drained
