  • 1 shallot, cut up
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup olive oil
  • 1 large tomato, chopped
  • 1 cup plain croutons
  • Purple flowering kale (optional)
