Oysters Rockefeller Roasted Chicken
1 medium onion, chopped
1 small celeiy rib with leaves, chopped
1 small fennel bulb, chopped
1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
1 (6 1/2- to 8-ounce) can whole oysters or 1 pint shucked fresh oysters,drained and chopped,liquor reserved
3 cups torn French bread(about 8 ounces)
Salt and freshly ground pepper
1 large roasting chicken (6 to 7 pounds)
1 tablespoon butter, softened
2 tablespoons flour
2 cups chicken broth
2 tablespoons Pernod or other anise liqueur
