Three-bean Chili
1 medium onion, chopped
2 garlic cloves, minced
1 medium carrot, chopped
7 cups water
1/3 cup low-sodium tomato puree or tomato paste
2 cups brown lentils, rinsed
1 green bell pepper, chopped
1 yellow or red bell pepper, chopped
2 1/2 cups home-cooked or canned low-sodium dark red kidney beans, drained and rinsed
1 cup home-cooked or canned low-sodium pinto beans, drained and rinsed
2 cups chopped fresh or low-sodium canned tomatoes with juice
1 tablespoon chili powder
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
