  • 1/4 red bell pepper
  • 1/4 medium onion, cut into fourths
  • 1 clove garlic, smashed
  • 1/2 cup milk
  • 3 tablespoons chopped fresh cilantro
  • 1 tablespoon butter, melted
  • 2 eggs
  • 1 3/4 cups all-purpose flour
  • 1/2 cup cornmeal (preferably stone-ground)
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
