Ingredients

  • 1 (15 ounce) can apricot halves in light syrup, drained, reserving juice
  • 1 Tablespoon cornstarch
  • 2 Tablespoons oil
  • 1 medium onion, thinly sliced
  • 1 red or yellow sweet pepper, thinly sliced
  • 1/2 cup reduced-sodium soy sauce
  • 2 Tablespoons honey
  • 1 1/2 teaspoons ground ginger
  • 3 cloves garlic, finely minced
  • 1 1/2 lbs. medium, raw, cleaned shrimp
  • Hot cooked rice or soba (buckwheat) noodles

Description
