Apple Potato Wrap Tenderloin

Ingredients

  • 2 lbs pork tenderloin
  • 2 small Granny Smith apples
  • 2-3 Idaho potatoes
  • 1 orange's zest
  • 1 lemon's zest
  • 1/2 stick butter
  • 12 shallots, peeled and roasted until browned
  • Vegetable oil
  • Sauce:
  • 2 shallots
  • 2 cloves garlic
  • Pork trimmings, any to add
  • 2 plum tomatoes, seeded
  • 1 sprig thyme
  • 1 quart veal stock
  • 2 oz Calvados, a dry apple brandy

Description

This Dish Will Look Like It Came Out Of The Kitchen Of A Restaurant When It Is Finished And Ready To Be Served. The Apples And Shallots Compliment The Pork Nicely.
