Ingredients
- 2 lbs pork tenderloin
- 2 small Granny Smith apples
- 2-3 Idaho potatoes
- 1 orange's zest
- 1 lemon's zest
- 1/2 stick butter
- 12 shallots, peeled and roasted until browned
- Vegetable oil
- Sauce:
- 2 shallots
- 2 cloves garlic
- Pork trimmings, any to add
- 2 plum tomatoes, seeded
- 1 sprig thyme
- 1 quart veal stock
- 2 oz Calvados, a dry apple brandy
Description
This Dish Will Look Like It Came Out Of The Kitchen Of A Restaurant When It Is Finished And Ready To Be Served. The Apples And Shallots Compliment The Pork Nicely.
