Vegetarian Spaghetti Pasta

Ingredients

  • 1 large onion, diced
  • 6 cloves garlic, crushed through a press
  • 1 long eggplant, sliced
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 3 broccoli florets, diced into small pieces
  • 3 cauliflower florets, diced into small pieces
  • 8 spears asparagus, cut 1/2 inch long
  • 12 peeled baby carrots
  • 12 white mushrooms, sliced (optional)
  • 2 large fresh tomatoes, chunked
  • 1 tbsp olive oil
  • 1 14.5 oz can premium diced tomatoes
  • 1 6 oz can tomato paste
  • 1 tbsp raw brown sugar
  • 1 1/2 tsp garlic salt
  • 1 tsp pepper
  • 1 tsp bouquet garni
  • 1/4 cup red wine, optional
  • 1 bunch of artichoke, spinach, or wheat spaghetti--about 1 inch diameter bunch
  • 1 lb grated mild or sharp cheddar cheese
