Ingredients

  • Crust:
  • 1 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 6 tablespoons ice water or enough to hold it together
  • Filling:
  • 2 pkgs 3.4 oz vanilla cook and serve pudding and pie filling
  • 1 cup flake coconut
  • 3 1/2 cup whole milk
  • Meringue:
  • 3 egg whites
  • 1/2 tsp cream of tarter
  • 1/3 cup sugar
  • 1 tsp vanilla
