- 1/2 cup Chardonnay wine
- 1/2 cup half-and-half
- 1 stick unsalted butter, thinly sliced
- 1/2 tsp EACH sea salt and ground white pepper
- For Croquettes:
- 1 rotisserie chicken, skinned, meat pulled from bones and chopped finely
- 1 red onion, finely diced
- 5 green onions, chopped
- 1 red bell pepper, seeded and diced
- 1/2 cup mayonnaise
- 1 1/2 Tbsp honey mustard
- 1 cup Panko bread crumbs
- 1/2 tsp EACH sea salt and freshly ground black pepper
- 1/2 tsp Tabasco sauce
- 1/2 tsp Worcestershire sauce
- 6 Tbsp butter
- 2 Tbsp flour
- Lime wedges
