Goat Cheese, Walnut, and Spinach Terrine

Ingredients

  •  2 small cloves garlic, divided
  •  1 8-ounce package cream cheese, at room temperature
  •  10.5 ounces goat cheese, at room temperature
  •  3 tablespoons whipping cream, half and half or milk
  •  1/2 teaspoon chopped fresh rosemary leaves
  •  Salt and freshly ground black pepper, to taste
  •  1 10-ounce package frozen chopped spinach, thawed and squeezed very well
  •  1 cup chopped fresh parsley
  •  1 cups walnut halves or pieces
  •  1 cup freshly grated Parmesan cheese
  • 1/2 cup olive oil
  •  Juice of 1 lemon
  • 1 teaspoon dried basil
  •  1 teaspoon dried oregano
  •  1 teaspoon dried thyme
  •  Crackers
