Salad, Herbed Bulgur And Lentil (1 C Serving)

Ingredients

    1 c dry lentils (green or yellow preferably)
    2 c water
    1 c dry bulgur
    1 c boiling water
    1-2 tbsps olive oil
    1/4 c lemon juice
    2 cloves garlic, crushed
    2 Tbsp mint, chopped
    2-3 Tbsp dill, chopped
    fresh black pepper, to taste
    1/4 c parsley, chopped
    1/3 c red onion, finely chopped
    1 bell pepper, diced
    1 stalk celery, finely chopped

    Optional: 1 tomato, diced, or 0.5 c of one or more of the following (not included in nutritional values): crumbled feta cheese, nicoise or other black olives, walnuts, toasted and chopped
