Coronation Chicken Salad

Ingredients

    2.5 lbs. boiled bonless, skinless chicken breast, shredded
    2 t olive oil
    1 samll onion, peeled and finely diced
    2 T red curry paste
    2 T tomato puree
    2 fl. oz. red wine
    1 bay leaf
    juice of 1/2 a lemon
    4 canned light apricot halves, chopped
    3 T. apricot jam (sugar free)
    1 c. light mayo
    1/2 c. heavy whipping cream
    salt and pepper

This Is An English Tradition, Created In 1953 For The Queen Of England. Sweet And Savory, It Is Delicious On A French Hamburger Roll, Or Served As Part Of A Green Salad.
