Ingredients

    1 cup chopped carrots
    2 cups water
    1 cup chopped celery
    1/2 cup chopped onion
    1 clove garlic, minced
    1 teaspoon olive oil
    2 cups dried split peas, washed and picked over
    2 quarts 99% fat free chicken broth ( 8 cups )
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1/2 teaspoon salt
    pinch cayenne (optional)
    2 cups fresh baby spinach
    1/4 cup fresh parsley, minced
