    1 cup cucumber, peeled and diced
    1 cup green pepper, seeded and diced
    3 tablespoons pimiento-stuffed green olives, sliced
    2 teaspoons ground coriander seed
    1 teaspoon fresh mint, thinly sliced
    2 teaspoons white wine vinegar
    1 tablespoon extra virgin olive oil
    salt and pepper to taste
