Pasta With Vegan Red Sauce, Eggplant And Greens

Ingredients

    1/2 large red onion, finely chopped
    3 medium stalks of celery, finely chopped
    3 medium carrots, finely chopped
    1/2 red bell pepper, finely chopped
    1 medium zucchini, diced
    1 slice vegan bacon, diced
    1 clove garlic, minced
    1/2 a large red tomato, cubed
    1 cup tap water
    2 tsp. Garlic Powder
    Salt to taste
    2 tbs. olive oil
    1 cup napa cabbage, chopped
    1/4 cup water
    4 cups fresh spinach
    1 lime, for juicing
    1/2 medium eggplant, sliced into rounds
    1 tsp. olive oil
    6 oz dry pasta, cooked according to package instructions

This Is Just Something I Made Up One Night, At Home With Tons Of Vegetables :) The Serving Size Is Purely Arbitrary-- I Had Three Servings Worth Of Pasta Left, So I Just Made It All And Divided The Vegetables Among It. This Is A Really Yummy Way To Get Yo
