    Aubergine (eggplant), fresh, unpeeled (approx 1-1/4 lb)
    Garlic, 3 cloves
    Onions, raw, 1 cup, chopped
    Tomatoes, chopped, canned, 400 grams or 1 can
    Feta salad topping, 150 grams
    Olive Oil, 1 tbsp
    Vegetable Stock - 2 cup, homemade is better but instant is fine.
    Flour, white, 0.25 cup
    Milk, nonfat, 1 cup
    Beans, red kidney, 1.5 cup
    Sweetener tablets/powder, 3 or 3 tsp.
    Salt
    Ground Black Pepper
    Seasoning (Thyme, all-spice and cinnamon for the tomato sauce, nutmeg for the white sauce).
