Cabbage Rolls Normande

Ingredients

    Filling:
    1 Medium onion, chopped fine
    1 tbs. oil
    1 clove garlic, minced
    1 large stalk celery, diced
    1 medium carrot, diced
    1 tsp. ground coriander seed
    3 cups cooked brown rice (Kashi or brown/wild rice mixture)
    2 tbsp. shoyu (soy sauce)
    1/2 cup chopped toasted filberts or almonds

    Sauce:
    3 tbsp. whole wheat flour
    2 cups apple juice
    1 cup vegetable stock or water
    1/4 cup fresh lemon juice
    zest of 1 lemon
    1/2 tsp salt
    1/2 cup raisins

    12-14 large cabbage leaves (1 large cabbage)
