Red Curry Chicken

Ingredients

    For the Red Curry
    2 tbs olive oil
    2 lbs boneless skinless chicken thighs, cubed
    2 small onions, finely chopped
    2 tbs garlic, chopped
    1/4 tsp ground ginger (or 1 tsp fresh chopped)
    2 tbs red curry paste
    2 cups chicken stock
    2/3 cup coconut milk
    2 tbs lime juice
    1 1/2 tbs dried cilantro (or 3 tbs fresh, chopped)
    1/2 tbs fish sauce
    1 tsp packed brown sugar

    For the Coconut Rice
    2 cups basmati or jasmine rice
    2 tbs olive oil
    1/4 tsp salt
    a pinch of saffron (about 10 to 12 threads)
    2 cups chicken broth or water
    1 1/2 cup coconut milk
