Apricot Poppy Chicken


    1 tbsp EVOO
    6 oz chicken (cubed)
    1 tbsp apple cider vinegar
    1/2 cup chicken broth
    1 tbsp apricot preserves
    1 tbsp honey
    1/2 tbsp poppy seeds

    Coat pan with EVOO, brown chicken. Add vinegar and chicken broth, let cook down for 5 minutes. Add apricot preserves, honey, and poppy seeds.

    Serve over rice.
