Clean Eating: Chocolate Sour Cream Cupcakes

Ingredients

    1 cup unsweetened natural cocoa powder
    1 1/4 cup evaporated cane juice (labeled as sucanat), divided
    1 cup light sour cream
    1/3 cup and 2 tsp. skim milk (or unsweetened vanilla/chocolate/plain almond milk) divided
    1/4 cup whole wheat pastry flour
    1 whole egg and 2 egg whites
    1 tbsp. olive oil
    1/4 tsp. kosher salt
    1/4 tsp. baking soda
    1/2 tsp. vanilla
    1/2 tsp. light agave nectar
    1 oz. unsweetened baking chocolate

This Recipe Is Adapted From The One Which Appears In A Recent Issue Of Clean Eating Magazine. I Have Made Several Changes To The Original To Lower The Caloric Content As Well As Sweeten The Glaze Slightly.
