- 1 cup chicken breasts, cooked and diced (you can use a rotisserie chicken)
2 tablespoons butter
2 tablespoons flour
2 cups half and half (or 1-12oz can evaporated milk, I use 2% + 1/2 cup 1% milk)
3/4 cup chicken broth
1/4 cup celery, finely diced
2 garlic cloves, (1 teaspoon) minced
1/2 cup carrots, finely shredded
1/2 cup onion, finely diced
1/2 cup fresh spinach, coarsely chopped
1/2 tablespoon extra virgin oil
1/4 teaspoon thyme
1/4 teaspoon parsley
1/4 teaspoon cardamom
1/2 pound potato gnocchi can buy this in the gourmet section of many supermarkets
Freshly grated parmesan cheese optional
