- 3 cups shredded cabbage or coleslaw mix (For more colors use red and green cabbage)
1 cup coarsely shredded carrots
1 cup diced fresh pineapple
1/4 red bell pepper shredded
1 teaspoon celery seeds
1/2 cup low-fat mayonnaise
1-2 Tablespoons fresh lime juice
1/2 red apple (such as Braeburn) shredded
1/2 teaspoon sea salt
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon cayenne
1 Tablespoon honey
NOTES: For less sodium, omit sea salt.
You can also use Splenda or sugar substitute for honey.
