    1 large onion, chopped
    2 carrots, peeled and roughly chopped
    8 large portobello mushrooms, cut into chunks
    3 cloves garlic, chopped
    4 sprigs roesemary
    1/2 t red pepper flakes
    1/3 bottle red wine
    1-28 oz can crushed tomatoes
    2 c chicken stock
    a few handfuls pecorino romano cheese
    1/2c parsley, chopped
