Chicken Skillet Pie


1 1/2 Cups all-purpose flour
1 1/2 Teaspoons baking powder
1/2 Teaspoon baking soda
1/2 Teaspoon kosher salt
2/3 Cup buttermilk
4 Tablespoons unsalted butter, melted (only butter in the recipe)

6 Tablespoons all-purpose flour
1 1/2 pounds chicken, trimmed of fat.  You could use breasts or thighs
2 Tablespoons vegetable oil
1 onion, minced
2 large carrots, peeled and sliced into 1/4 inch pieces
2 red peppers, seeded and roughly chopped
1 rib celery, cut into 1/4 inch slices
3 cloves garlic, minced
4 Cups chicken broth
2 bay leaves
4 ounces spinach, chopped roughly
1/2 Cup frozen peas
1/4 Cup half-and-half or cream
2 Tablespoons fresh parsley (optional)
2 Teaspoons fresh thyme (optional)
Salt and pepper
