Ingredients
- Noodle Mixture:
I know it sounds odd but it's such delicious surprise! I make it ahead in bulk and store in an airtight container.
1 (3 ounce) package ramen noodles, crushed
2 tablespoons butter, melted
2 tablespoons of sugar
Dressing:
I make this in bulk and stash in a jelly jar in the fridge. Keeps for quite awhile but you'll finish it before it has time to go bad. :) I even use as a marinade for grilled chicken!
1/4 C orange juice concentrate
1/3 C soy sauce
1/2 oz ginger,
1/2 oz garlic, minced
1/2 C olive oil
1/2 tsp red chili flakes (optional)
Salad:
4 cups shredded bok choy
5 green onions, thinly sliced
2 cooked chicken breast, chopped
1 (5 ounce) can water chestnuts, drained
1 small can of mandarin orange slices
15 fresh snow pea pods
OPTIONAL:
I add 1 tbsp GROUND flax or chia seed to give this salad an Omega 3 whammy. Note: it is not calculated in the nutritional info.
