Olive Garden Minestrone Soup

Ingredients

    1 tsp olive oil
    1/2 cup zucchini
    1 can green beans
    1/2 cup minced celery
    4 cloves garlic
    1 can Swanson vegetable broth
    1 can light red kidney beans
    1 can great northern beans
    28 oz can diced tomatoes
    1/2 cup shredded carrot
    2 tsp dried parsley
    1 1/2 teaspoons dried oregano
    1/2 teaspoons salt
    1/2 teaspoon ground black pepper
    1/2 teaspoon dried basil
    1/4 teaspoon dried thyme
    1/2 tsp garlic powder
    8 cups hot water? not sure how much
    4 cups fresh baby spinach
    1 serving barilla shell pasta

    made A LOT of soup.

    WAY too much vegetable stock, almost inedible.
    david tried adding a bit of dried dill to his bowl of soup, not my favorite, made it sour.

    added a lot of ground black pepper to my leftover bowl to kill the veggie stock taste, really helped flavor the recipe. it was almost tasty.
