    Tomatoes, 2.50 cup, chopped
    Prebaked tofu,11 oz , cut in cubes
    Creamy Unsalted Peanut Butter, 3 tbsp
    Light Coconut Milk, 1 14 oz can
    Garbanzo Beans, cooked, .75 cup
    Vegetable Broth Homemade or purchased, no salt added, 1.50 cups
    Jalapeno Peppers, 1 large pepper or 1-2 smaller,, seeds and membranes removed, minced
    Basil, fresh, 4 tbsp chopped
    Lime Juice, 1 lime yield
    Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips, 3 serving (remove)
    Lemon grass, 1 tbsp packaged or 3 stalks fresh
