1 Lg onion
1 1/2 tsp. ground cumin
1 tsp. chipotle chile powder
2 cans 28 oz each whole tomatoes in puree
1 med. cauliflower, cut into florets about 4 cups
2 med. sweet potatoes peeled and cut int 1/2 inch cubes
4 lg. carrots peeledn and cut into 1/4 inch coins
1 lg. green bell pepper, cut into 1/2 inch dice
1/2 tsp. salt
1 can 15oz mexican chilli beans
sliced scallions for garnish
brown rice optional
