Dev's Basic Curry

Ingredients

    2 red potatoes (unpeeled), chopped
    1 T EVOO
    1 onion, diced
    2 T minced garlic
    2 T grated ginger
    1 tsp ground cumin
    1 tsp ground coriander
    1 tsp turmeric
    1/2 tsp ground cardamom
    1/2 tsp anise or fennel seed (optional)
    1 tsp sea salt
    pinch of cayenne (optional)
    2 carrots, chopped
    1 head cauliflower, broken into bite-sized pieces
    2 cups broccoli florets
    1/4 cup veggie stock or water
    1 tomato, diced
    1 (14 oz) can chickpeas, drained and rinsed, or 2 cups cooked
    2 tablespoons coconut milk

Description

Substitute 3.5 Tsp Curry Powder For The Cumin, Coriander, Turmeric, And Cardamom. Serve With Pulao
