Fish Soup With Saffron And Cream

Ingredients

    3 tbsp olive oil
    3 medium carrots, peeled, chopped
    2 leeks (white and pale green parts only), chopped
    2 celery stalks, chopped
    1 red bell pepper, chopped
    1 bay leaf
    1 or 2 pinches of saffron threads
    2 cups dry white wine
    1 & 1/2 cups of bottled clam juice
    1 cup of whipping cream
    1 pound skinless & boneless Sea bass fillet, cut into 1 inch pieces
    1 pound Sea scallops, cut in half
    fresh chives, chopped
