    1 butternut squash (may substitute with any winter squash) 4-6 cups cooked and cubed

    14-ounce can of pumpkin (2 cups cooked and pureed pumpkin)

    4 Tbsp. Olive oil

    2 large sweet Spanish onions, diced (4 cups)

    3 cups tomato juice

    2 cups apple juice

    2 cups fresh orange juice, or, 2/3 cup frozen concentrate.

    4 carrots, diced

    4 stalks celery, chopped

    10 large potatoes, diced

    ½ tsp. Nutmeg

    ½ tsp. Cinnamon

    ½ tsp. Thyme

    1 tsp. Italian seasoning

    1 tsp. Salt

    1 tsp. Pepper

    4 bay leaves
