Mediterranean Quinoa Salad

Ingredients

    1 cup dry quinoa
    1.25 cups water
    2 tbsp olive oil
    4 tbsp balsamic vinegar
    1 Tbsp Italian Seasoning (pre-made blend of dried herbs and spices - oregano, basil, rosemary, parsley, sage, thyme, onion powder and garlic powder)
    1 tbsp chopped parsley (or basil)
    1/2 red bell pepper - diced
    1/2 cup diced English (seedless) cucumber (or you can use zucchini)
    1/8 cup finely diced red onion (or more to your liking - I don't like too much)
    2 oz feta cheese cut into small cubes
    2 cups frozen sweet corn

Quinoa Contains A Lot Of Protein So This Cold Dish Can Be Either A Main Course Or A Side Dish.
