Edamame (soybean) Salad Recipe

Ingredients

  • 12 oz. bag frozen soybeans (Edamame)
  • 1 cup grape tomatoes, cut in half
  • 1 cup celery, diced
  • 1 cup cucumber, peeled and diced
  • 1 cup red bell pepper. diced
  • 1/4 cup sweet onion, diced
  • 1/4 cup parsley, chopped
  • 2 Tbsp. basil, finely sliced
  • 2 Tbsp. white balsamic vinegar
  • 1/4 cup olive oil
  • 1/2 teas. italian seasoning
  • 1 garlic clove, minced fine
  • salt and pepper to taste

Description

This Is A Favorite Summer Salad Of Mine. I Make It And Take It To Work To Eat For Lunch. It Is Easy To Make And A Very Healthy Salad. For Those Of You That Haven't Tried Soybeans (Edamame). Don't Be Intimidated - Try Them - They Are Delicious!
