Ingredients

    2 cups chopped onions
    3 minced garlic cloves
    1 c diced potatoes
    1 c diced carrots
    1c peeled diced parnips
    2c peeled and diced rutabaga or turnips
    2c peeled and diced beets
    6 c water
    2 tsp salt
    2 bay leaves
    1 tbsp dill and/or thyme minced
    1/4 c cider vinegar
    5c chopped spinach or swiss chard
    salt and ground pepper
