4 cups shredded green cabbage, approx. 1/2 a head
1/2 cup leeks, sliced and rinsed to remove grit (white & light green parts only)
1 cup zucchini, sliced
1 cup mushrooms, sliced
1/2 teaspoon basil, dried
1/2 teaspoon oregano, dried
1/2 teaspoon rosemary, dried
1 teaspoon garlic, minced
1/8 teaspoon ground pepper
1/2 teaspoon salt, optional
1 (14.5 oz) can diced fire-roasted tomatoes
1 cup spinach, coarsely chopped
2/3 cup dried orzo
Parmesan cheese, optional
