Ingredients
- 400g thick cod fillets, skin and bones removed
8 thin pancetta or smoked bacon slices, cut in half
16 parsley leaves
8 cherry tomatoes, halved
2 tbsp extra virgin olive oil
(INGREDIENTS FOR SALAD)
2 baby gem lettuce leaves only, roughly chopped
half red pepper, thinly sliced
half red onion, thinly chopped
3 tbsp lemon juice
3tbsp extra virgin olive oil
(TO MAKE THE SALAD)
place red pepper, red onion and lettuce in a bowl, season to taste with salt and pepper, drizzle with 3tbsp oil and lemon juice, toss and serve with the skewers
