Ingredients

  • 6 ounces sliced lean sugar-cured streaky bacon
  • 2 pounds smoked fish (cod, haddock, or salmon)
  • 8 cups mixed salad greens torn into bite-size pieces
  • 1 medium red onion, thinly sliced
  • 4 ounces Swiss cheese, cut into julienne
  • 8 ripe cherry tomatoes, cut in half
  • ½ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • Freshly ground black pepper to taste
