Thai-style Tofu Tomato Curry

Ingredients

    1 block of Tofu (extra-firm)
    2 medium-size carrots (or more if desired)
    1.5-2 medium sized tomatoes
    0.5 - 1 onion
    1 can of coconut milk
    2 cups water
    2 tbsp cooking oil

    spices:
    1 tbsp ground coriander
    .5 tbsp curry powder
    1-2 tsp mustard seed

    garnishes:
    fresh cilantro
    lime or lemon juice
    chili pepper flakes
    Thai basil
    bean sprouts

Description
