- 2 cups Quinoa(or you can substitute Bulgur)
1/4 Cup Lemon juice
1 Tbs Olive Oil
1 Small Onion (white or red)
1 Cup Cherry Tomatoes, each cut in half
1 Medium Zuchinni, chopped
1 Medium Butternut Squash (or you can use yellow Zuchinni or other type of Squash)
1/2 Cup loosely packed fresh Mint Leaves, chopped
1/2 Cup loosely packed fresh Parsley, chopped
1/2 tsp Salt
1/4 tsp Black Pepper

I Got This Recipe From Good Housekeeping's Family Vegetarian Cooking, But Substituted Quinoa For Bulgur And Butternut Squash For Summer Squash..and Regular Onion For Red Onion, So Yay..kind Of Change A Lot But It Was Still SUPER Tasty!
