1 package chicken andouille sausage ( around 12.8 ounces)
1 large onion, halved, thinly sliced
1 large red or green bell pepper, cut into 1/3-inch wide strips
1/2 tablespoon tarragon
1 cup low sodium chicken broth
3 tablespoons creole mustard (can use regular, just add a splish of tabasco)
2 teaspoons red wine vinegar
