Ingredients
- 1 Tablespoon Extra Virgin Olive Oil
1 Cup chopped onion
1/2 Cup chopped green pepper
3 Cups cut or shredded cooked chicken breast
1 can whole kernal corn, well drained
1 can black beans, well drained & rinsed
4 cups canned tomatoes (mine were homecanned)
2 cups water
1 1/2 cups Salsa
1 Tablespoon chili powder
1 Tablespoon Southwest seasoning mix
1/2 cup Evaporated Milk
Description
This Was Very Tasty And Satisfying. It Was My First Attempt At Tweaking A Recipe To Fit The Zone Eating Plan. Please Know That This Can Be Subject To Error Because I'm Still Learing.
