2 lg. sweet potatoes or 4 red potatoes (or some of each)
2-3 chicken breasts, cut into cubes (can use precooked chicken)
1 (16oz.) jar salsa (medium or hot)
1 can evaporated milk
6 c. chicken broth
Salt & pepper to taste (about 1/2-1 t. each)
2 T. brown sugar (optional--if you like it a little sweet)
1 t. chili powder
1/2 c. crunchy or smooth peanut butter
1/2 c. uncooked brown or white rice
