Low Fat Mushroom - Artichoke Soup

Ingredients

    Shallots, 1 1/2 cup, sliced fine (or onion)
    Carrots, raw, 2 large (7-1/4" to 8-1/2" long) sliced.
    Olive oil 1 tbspn
    *Organic All-Purpose White Flour, 3-4 tbsp (see how thick you want the soup - I used 3)
    Thyme, ground, .5 tsp
    Garlic powder, .5 tsp
    Paprika, .5 tsp (cayenne if you like spicy)
    Pacific Natural Foods Organic Low Sodium Chicken Broth, 1 pk of 32 oz.
    Sun Dried Tomatoes, 1 cup (or oil packed is fine, drained)
    Marinated artichokes, 2 1/2 cups (well drained and rinsed,each half sliced in 4 pieces)
    Bay Leaf, 2 whole
    *Horizon Organic 2 % Milk, 2 cup (can use fat free)
    Marinated Artichokes 24 halves cut in quarters.
    Scallions, raw, .25 cup, thinly sliced for garnish
    *Pepper, white, .5 tsp
    Fresh Bella Mushrooms 16ozs. rinsed, sliced.
    Shiitake Mushrooms, dry, 400 grams, soak in hot water, drain, rinse well and coarsely chop.
    Fresh cabbage sliced, 2 cups.
    butter nut squash or sweet potato, peeled, cubed 1 1/2 cups.
    Edamame shelled 1 cup
    Frozen green peas 1 cup
