* 2 lbs Boneless Skinless Chicken Breast, cubed
* 1 C Fresh Mushrooms, diced
* 1 (8oz can) Water Chestnuts, drained & diced
* ½ C Celery, diced
* 1 C Carrots, shredded
* ¾ C Green Onions (scallions), julienned
* 1 Tbsp Ginger Root, minced
* 16 leaves Bibb or Boston Lettuce
* ¼ C Roasted Red Peppers, drained, patted dry and diced
* 1 Tbsp Extra Lite Olive Oil
