    1 cup wild rice (will yield 2 cups cooked)
    1/2 cup diced jicama
    4 medium radishes, halved and sliced
    5 small scallions, sliced
    1 carrot grated
    1/2 medium apple diced
    1/4 cup sliced almonds

    Dressing
    juice of one lemon
    2 tbls red wine vinegar
    3 tbls olive oil
    1 clove garlic, grated or pressed
    salt and pepper to taste
