Ingredients

    12 ounces Chinese wheat or egg noodles, or thin spaghetti or vermicelli
    4 cups canned chicken broth, plus
    4 cups water
    3 slices unpeeled fresh ginger
    1 teaspoon salt, or to taste
    1⁄4 teaspoon freshly ground white pepper
    1 teaspoon cornstarch
    1 teaspoon Chinese rice wine or dry sherry
    1 pound skinless, boneless chicken breast, shredded, about 2 cups
    5 cups spinach, watercress, or napa cabbage, cut into 2-inch pieces
    2 teaspoons sesame oil, for garnish
