    1/2 cup whole wheat pastry flour
    1/2 cup stone ground yellow cornmeal
    1 1/2 tsp evaporated cane juice or granulated sugar
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp Kosher salt
    1/2 cup + 2 Tbsp low fat buttermilk + 1 tbsp. cider vinegar
    1 egg replacer mixed with water as per instructions
    1 1/2 Tbsp vegan butter, melted
