Thai Chicken Soup (noodless)

Ingredients

    1 tbsp sesame oil
    4 garlic cloves, minced
    2 tsp ginger, minced
    1 pound boneless, skinless, chicken thighs, cut into 1 inch pieces
    1/4 cup natural, chunky peanut butter
    1 cup crushed tomatoes
    6 cups reduced-sodium chicken broth
    1 tbsp fish sauce
    6 ounces rice noodles (save approx 8 carbs/serving if you omit)
    2 cups shredded green cabbage
    1 cup canned bean sprouts, drained
    1/4 cup chopped scallions
    Add chopped cilantro or peanuts if desired
