1/2 teaspoon ground turmeric
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1 and 1/2 cup water
tomato paste (approx 133g)
1 14.5 ounce can diced tomatoes, with juice
2 tablespoons fresh lemon juice
1 medium, peeled butternut squash, cut into 1-inch cubes (approx 1013g)
5 carrots, peeled and sliced into rounds (approx 392g)
1 cup quinoa
1 tablespoon Smart Balance (or 10g butter)
1/4 cup chopped fresh basil or parsley (original recipe used cilantro) (approx 8g)
